Popeyes, the popular fried chicken franchise recognized for its zesty Louisiana-style cuisine, commenced operations in 1972 with a different name: "Chicken on the Run." Established in New Orleans by Al Copeland, the eatery aimed to rival fast-food titans such as KFC by presenting a traditional Southern fried chicken formula. Nevertheless, the initial idea failed to resonate with patrons who deemed the chicken too bland. Promptly responding to feedback, Copeland rebranded the establishment and crafted a spicier recipe infused with Cajun influences, rechristening it "Popeyes" in honor of Gene Hackman's character, Popeye Doyle, from The French Connection.
